Apprentice Baker / Pastry Chef (1st, 2nd or 3rd Year)
Merlo Coffee is looking for a passionate apprentice to join our artisan bakery at Bowen Hills – Milano Bakehouse.
Whether you're just starting out or partway through your apprenticeship, this is your chance to learn hands-on from industry leaders in a state-of-the-art bakery kitchen.
What You'll Be Doing:
Working alongside our world class, experienced bakers and pastry chefs to prepare a range of products from scratch
Learning the foundations of artisan baking and French-style pastry
Developing skills in mixing, shaping, proofing, baking and finishing
Maintaining a clean and organised workstation
Following food safety and hygiene best practices
Getting stuck into daily production and growing your confidence each day
What We're Looking For:
Enthusiasm, curiosity, and a love for all things baked
A strong work ethic,



willingness and commitment to learn
Great communication and a team-first attitude
Enrolled (or ready to enrol) in a Certificate III in Baking or Patisserie
Previous kitchen or bakery experience is a benefit
Ability to complete early morning starts (2-3am)
Own method of reliable transport to get to and from work
